Christmas time is all about getting together with family and friends. Whatever your plans are for the big Christmas dinner, mulled wine will act as the perfect accompaniment. Why not greet your guests with a glass of mulled wine upon their arrival? Our Catering Manager, Lee Corke, shares his mulled wine recipe with you and it is guaranteed to help your guests get into the Christmas spirit.
Clare College’s recipe for mulled wine
- 1 x bottle of red wine
- 300ml orange juice
- 200ml apple juice
- 25ml brandy
- 3 x cinnamon sticks
- 5 x cardamom pods
- 3 x star anise
- 8 x bay leaves
- Place all of the ingredients into a heavy based saucepan.
- Bring up to heat just below boiling point.
- Leave to stand for 5 hours to infuse then strain through a conical strainer.
- Re-heat as required but do not serve too hot.
